This is a recipe for classic tzatziki sauce. It is typically used on falafel but we use it all the time to add a cool and refreshing touch to any dish. Try it on sweet potato fries, salads, as a dip, or on anything else, you can't go wrong!
Cucumber Tzatziki Sauce
1/2 cucumber, diced
1 1/2 cup plain yogurt
1 small clove garlic, minced
Juice of 1/4 lemon
10 mint leaves, chopped
Salt and pepper to taste
Combine all ingredients and season to taste. Best if allowed to sit in fridge while rest of meal is prepared to allow the flavors to meld together.
